A Family Favorite After School Snack Recipe

This school year I made a goal to have an after school snack prepared for my kiddos when they arrive home each day (learn more about that here). I knew I had to share the recipe for one of our family’s favorite after school snacks on the blog. I discovered this recipe a couple years ago while watching a talk show called The Chew. Clinton Kelly demonstrated an easy recipe for no-bake Peanut Butter Oatmeal Balls that I knew would appeal to my family. One of my favorite snacks as a kids was the peanut butter balls my mom would roll in wheat germ and keep in the freezer. I remember what a treat it was because she would use Peter Pan peanut butter. It was so sweet and creamy and not at all like the gritty natural peanut butter my mom preferred.

Clinton Kelly’s version of the peanut butter ball is much different than my childhood favorite, but equally yummy! It combines oatmeal, peanut butter, coconut, honey, vanilla extract and chocolate chips to make a sweet, bite-size treat to keep kid’s bellies full until dinner. I have found a happy medium between using natural peanut butter and Peter Pan peanut butter for this recipe. The Trader Joe’s Creamy Salted Peanut Butter does not use any ingredients other than dry roasted peanuts and salt. After a good stir the texture is smooth and creamy.

These Peanut Butter Oatmeal Balls have become a frequently requested snack in our house. It is a great recipe to make with little ones who enjoy dumping and stirring ingredients. Older children will have no problem making this recipe on their own. Due to the fact that this snack will disappear quickly, I would suggest making a double batch and freezing half for a later date. Simply take the Peanut Butter Oatmeal Balls out of the freezer approximately 20 minutes before your are ready to serve them.

Peanut Butter Oatmeal Balls

Ingredients

  • 2 cups Rolled Oats
  • 2/3 cups unsweetened flake coconut
  • 3/4 cup Peanut Butter
  • 1/3 cup honey
  • 1 tsp vanilla extract
  • 1/2 cup chocolate chips

Directions

Add oats, coconut, peanut butter, honey, vanilla extract and chocolate chips to a large mixing bowl. Mix well until evenly combined. Chill in the refrigerator for 1 hour. Portion mixture using a small cookie scoop. Press into a ball using your hands. Place in an airtight container and store in the refrigerator.

Makes 30 Peanut Butter Oatmeal Balls

It can be a little tricky to form the Peanut Butter Oatmeal Balls. Letting the mixture cool in the refrigerator first is key. It is also helpful to handle to balls as little as possible. If your hands become too sticky, the balls tend to crumble and stick to your palms instead of to itself. After scooping the mixture, I use my finger tips to gently remove it from the scoop and press any loose pieces into place. If you absolutely can’t get your balls to stick together, slightly increase the amount of peanut butter or honey you have used.
