Parker’s Slow Cooker Rodeo Bean Recipe
Good Morning! Are you excited for the upcoming three-day weekend? Labor Day is a perfect excuse to have one last summer BBQ. Growing up I always spent Labor Day at my grandparent’s home in Carmel. My favorite memories are of the homemade peach ice cream my grandma would prepare in a hand-crank ice cream maker and running around playing hide-and-go-seek with my brother and cousins. My grandparents had a huge basement with a “secret” crawl space in one corner accessible only by a plywood bridge. It was the perfect hideout during our games. The Rodeo Bean recipe I am sharing with you today has been a staple at my husband’s summer BBQs since he was a boy. Rodeo Beans are the perfect side dish to serve with burgers, hot dogs, chicken or ribs. They have a unique smokey flavor that will have your guests requesting a second helping and most likely the recipe. This recipe was passed down to me from my mother-in-law and she received it from family friends that would make this dish every year during the Reno Rodeo (hence the name).
I especially like to serve Rodeo Beans when entertaining because we can prepare them well before the guests arrive and leave them to simmer in the slow cooker while we are straightening up and enjoying the company of our friends. They can also be made several days/weeks in advance, frozen, defrosted, and reheated the day of the BBQ. We recently did this for a dinner we prepared while camping with friends (read about our camping trip HERE). We prepared the Rodeo Beans several days before we left on our camping trip and transferred them to a CorningWare casserole dish with a plastic lid to freeze. Next, we placed the frozen Rodeo Beans in our cooler to transport to the campground. We allowed the Rodeo Beans to defrost over the course of the day and reheated them on the camp stove for dinner that night.
I love to use my slow cooker whenever possible. I put the Hamilton Beach 6-Quart Programmable Searing Slow Cooker on my Christmas List a couple years ago. It was the Real Simple Editor’s Choice for the best slow cooker. I liked the fact that I could brown meat in the removable insert on the stovetop, then add the rest of my ingredients and let dinner finish in the slow cooker. This slow cooker truly makes a one-pot meal because I’m not forced dirty a second pot to brown the meat.
Parker’s Rodeo Bean Recipe
Recipe originated from Lena Quilicy
- 1 pound hamburger
- ¾ pound bacon
- (2) small onions
- (2) 1 pound cans of pork and beans
- (1) 1 pound can of red kidney beans (drained)
- (1) 1 pound can of butter beans (drained)
- 1 ½ cup Ketchup
- 1 tbsp liquid smoke
- 3 tbsp white vinegar
- 1 ¼ cup brown sugar
Brown the bacon for 4 minutes. Add the hamburger and onions to the pot and continue cooking until hamburger is completely brown. Drain fat. Add all remaining ingredients to the slow cooker. Stir well. Cook 4-6 hours on low. Serve or freeze for a later date. Enjoy!
