Pork Tenderloin with Apple-Cranberry Gravy

I hope you all had a wonderful Thanksgiving! I love the fact that Thanksgiving was early this year. It feels like we have been able to ease ourselves into the holiday season and take a little more time to decorate. We definitely took advantage of the extra leisure time this weekend and the kids were not eager to go back to school yesterday.

Are you in need of a scrumptious meal to serve dinner guests this winter season? In our house whenever we find a dinner that is impossible to mess up and feels a little fancy we call it “company worthy”. This tasty Pork Tenderloin with Apple-Cranberry Gravy recipe was declared  “company worthy” the very first time I prepared it for my family. It is one of the first recipes I turn to when we have dinner guests on a chilly winter’s night. The flavors are popular with adults and kids alike. It is an easy recipe to double or even triple if you are feeding a crowd and it allows you to socialize with your guest due to the minimal effort it takes to prepare. Each bite of this juicy pork is accompanied by just a hint of sage and the warm apple-cranberry gravy is as comforting as a home baked apple pie. In fact, when the kids ask what we are having for dinner, my nickname for this particular recipe is “apple pie pork”. The first time I enjoyed this yummy meal was at my best friend’s home. It was the best pork I had ever tasted! She was kind enough to send me home with both the leftovers and the recipe. After that, it quickly became part of my monthly fall and winter meal rotation. Pork Tenderloin with Apple-Cranberry Gravy

Serves 4

Ingredients

  • 1½ lbs pork tenderloin trimmed of fat
  • ½ tsp salt
  • ½ tsp ground black pepper
  • ½ tsp ground sage
  • 3 tart apples, chopped
  • ½ cup packed brown sugar
  • 2 tbsp all purpose flour
  • ½ apple sauce
  • ½ water
  • 1 tbsp vinegar
  • ½ dried cranberries

Directions

Season pork with salt, sage and pepper. Roast, uncovered, in a preheated 350 degree oven 30 to 40 minutes.

Combine apples, brown sugar, flour, applesauce, vinegar, water, and dried cranberries. Pour over roast. Return to oven and roast for an additional 30 minutes or until meat thermometer registers 170°. Baste several times during roasting. Serve over rice, if desired. Enjoy!
