Summer Ravioli

I spotted these Sweet Corn, Burrata, & Basil Ravioli last summer at Trader Joe’s. They immediately grabbed my attention because it featured three of my favorite summer ingredients in one spot. Needless to say, they did not dissapoint. Unfortunately, they are a seasonal item so I have been counting down the months until they returned to the refrigerator section. 

During the summer I tend to always have the items in the picture below on hand. Individually, they all serve numerous purposes, but when combined, I have a quick and yummy summer weeknight meal that the whole family enjoys.

Prepping this meal is easy! Simply slice a handful of cherry tomatoes in half and chop a couple of basil leaves while the ravioli is cooking on the stovetop. Once the raviolis are done, toss with the tomatoes and basil and add a drizzle of Balsamic glaze.

I love how bright and fresh this meal looks when it is served.

One package of Sweet Corn, Burrata & Basil Ravioli feeds 1-2 people. I would cook 2-3 packages for a family of 4 and add a salad to make the meal even heartier. Trader Joe’s recently added an organic  Caesar Salad kit that is a hit with my family due to the creamy dressing.
