What’s Up: September

The very first blog I started following many, many years ago, The Larson Lingo, had a What’s Up Wednesday Post on the last Wednesday of every month. I always looked forward to reading it because we have similar interests/tastes and her recommendations were always spot on. Hopefully, you are a Parker Posts subscriber for the same reason. I’m excited to share my very first What’s Up post with you today. I hope you’ll let me know if we have been up to similar things this month or if you been eating, loving, watching, listening or reading something you think I would enjoy too.

What We’re Eating This Month

My husband went to Alaska earlier this month with a few buddies to go deep sea fishing. He came back with a freezer full of halibut, salmon and cod. Although I enjoy eating fish, I don’t have any experience cooking it. We have been amassing a collection of seafood recipes from a variety of sources ever since he got back. Here are a few of the recipes we have had success with so far. They have been easy to follow with a delicious outcome.

Grilled Halibut With Tomato Avocado Salsa

Grilled Lime Salmon with Avocado-Mango Salsa and Coconut Rice

Low-Carb Baked White Fish with Pin Nut Parmesan and Basil Pesto Crust

You can find these recipes and many more on My Favorite Tested & Approved Dinner Recipes Pinterest Board. I continue to add recipes that my family enjoys to this board afrequently. Follow along if you find we have similar taste in food.

What I’m Reminiscing About

Last September I went on an overnight trip to San Francisco with my bestie since the age of seven. We shopped, explored the city, ate well and enjoyed just being together. We have been talking about where we should sneak off to this year for a quick overnight. Any ideas???

We took a morning run over to Lombard Street. It was my first time visiting the famous crooked street.

What I’m Loving

I LOVE the fact that all of the seasonal fall items are back at Trader Joes! I’m putting together a post right now that lists my tried and true favorites as well as a few items that didn’t live up to the hype.

What We’ve Been Up To

We kicked the month of September off with a trip to the Hotel del Coronado. It was my first time visiting The Del and I LOVED it. We spent most of our time lounging, swimming and playing on the beach. I also spent a morning at their spa, took a spin class on the beach and enjoyed their Mermaid Fitness class with my daughter.

Tip: Make it a long weekend if you stay at The Del. The spa offers 20% off all services on Mondays. Another bonus for extending your stay until Monday is that the resort isn’t nearly as busy as it is on the weekend.

What I’m Dreading

I am dreading saying goodbye to my longtime gym. It will be closing on September 30th. This morning it hit me that I have no idea where I’ll be headed this time next week to work up a sweat. I loved that the Studio offered a variety of classes, times and was a short drive from home. I could attend a class as early as 5:45 am on a busy day or stroll in after dropping the kids off at school on days when I had a little more time. I’m going to use the month of October to explore all of the exercise options available nearby. I really appreciate all of the workout recommendations you have given me on FB.

What I’m Working On

I’ve been working on a Shutterfly photo book of our family’s trip to Washington DC this past June (read about our trip here). At the beginning of the school year I made a goal to set aside 30 minutes every Wednesday to work on our family photo books. I’ve finished downloading all of our photos and figuring out the lay out. Now I just have to add a few more captions. Next up, I need to finally finish my son’s 5th grade book (BTW- he’s in 7th grade now ๐Ÿ˜‚).

What I’m Excited About

We recently purchased this rug for our family room. I’m smitten with the bold blue and red colors and antique feel of the new rug. It makes my heart happy every time I walk through the space. In addition to the new rug, pulling out our fall decor, changing out the throw pillows and lighting a pumpkin spice candle has given the entire space a fall refresh and made me excited to spending more time inside curled up on the couch once the weather starts to cool.

What I’m Watching

WooHoo! It’s fall premiere week on TV. I have been anticipating the return of This Is Us, New Amsterdam and A Million Little Things. What show are you most excited to view? I’ve also been watching Hart of Dixie with my teenage daughter on Netflix whenever we have some free time. We watched Gilmore Girls a few years back and have been looking for another show to enjoy together ever since.

What I’m listening To

Podcasts… I like to put on Oprah’s Master Class when the kids are in the car. It is so inspiring to hear the story behind the success of so many fascinating people. Maya Angelou’s story was one of the most impactful.

When the kids aren’t around, listening to Armchair Expert with Dax Shepard is a guilty pleasure. It is so much fun to hear him chat with his guests. Some of my favorites have been Jimmy Kimmel, Amy Schumer, Ashton Kutcher, Lauren Graham, and Mila Kunis. The banter between Dax Shepard and his wife, Kristen Bell is especially enjoyable because they are so relatable.

What I’m Reading

I just finished Where’d You Go, Bernadette. I found myself laughing out loud multiple times throughout the book. It was such a fun read and I can’t wait to check out the movie version. Currently, I’m reading Liane Moriarty’s Nine Perfect Strangers. She is the also the author of Big Little Lies of which I was a huge fan. The book is off to somewhat of a creepy start as nine strangers gather at a health resort in the middle of nowhere with somewhat unconventional methods. It feels like a story that could take a dark turn at any moment. I’ll let you know what my final verdict is when I finish. Any recommendations for what I should read next?

What I’m Wearing

My love affair with bandanas continues. I picked this one up in August because it contained so many of the fall colors I’ve been excited to start wearing. Bandanas are one way I give a basic t-shirt and jeans outfit a little more style.

What I’m Doing This Weekend

We have a quiet weekend ahead of us. I’ll be cheering for my son from the sidelines of his soccer game and we are having friends over for dinner on Saturday. Fingers crossed, I’ll have at least one lazy morning in bed with coffee and a book.

What I’m looking Forward to Next Month

My daughter will be attending her first homecoming rally, parade, game and dance at the beginning of the month. Watching her experience high school makes me want to go back to high school a little bit. I’m also looking forward to our annual family outing to G&M Farms. We have such a blast racing each other through the corn maze to see who will earn bragging rights and searching for the perfect pumpkins. There is a picturesque weathered white barn on the property that is a great spot to pose for a family photo.

What Else Is New

Keep an eye on my Parker Posts Instagram page. I am joining together with some amazing and creative local women to do a fall give-away. More details to come…

Happy Fall Y’all๐Ÿ Let me know if you liked reading about What’s Up this month and if I should do this again next month.

We went to Alaska this summer and the fish and seafood were my favourite things to eat. Yum! And I felt so good when I FINALLY finished our Shutterfly photo book about the trip. They are so fun to have and so much work to finish ๐Ÿ™‚

The only Liane Moriarty book I’ve loved is What Alice Forgot. Have you read Eleanor Oliphant Is Completely Fine? It’s a good one and reminds of Bernadette (sort of).

Thank you so much for the book recommendation! I’ll keep an eye out for Eleanor Oliphant is Completely Fine on my next library visit. I completely agree with you about the Shutterfly books. They can take a lot of time, but the results are definitely worth it.

Thank you! I’m going to add Heartland to my watch list right now. I can’t believe it took me so long to discover Heart of Dixie. So many of the main characters are actors I have loved in other series.

You’re welcome! I really enjoy your easy cheesy zucchini bake too. I always end up with more zucchini than I need when purchasing it for a few of my favorite pasta dishes. The cheesy zucchini makes a great side to have the next night with a main course of chicken or steak. I’m looking forward to continuing to add your recipes to our weekly repertoire.
