Sweet and Savory Fall Ravioli
Good Morning! You might remember my quick and easy ravioli recipe that I shared over the summer in this post. Today I am sharing the fall version that is equally delicious. The key ingredient to this quick and easy meal is Honey Roasted Pumpkin Ravioli. It can be found in the refrigerated pasta section of your local Trader Joe’s. The Honey Roasted Pumpkin Ravioli are a seasonal item, so I would recommend grabbing a package (or two) before they disappear until next fall. I like to serve these ravioli with a simple brown butter and sage sauce. I find that the nutty flavor of the brown butter sage sauce compliments the sweet nature of the ravioli.
Honey Roasted Pumpkin Ravioli with Brown Butter and Sage Sauce
- 2 packages of honey roasted pumpkin ravioli
- 4 tablespoons unsalted butter
- 1 medium shallots, thinly sliced
- 16 fresh sage leaves
- ¼ teaspoon kosher salt
- ¼ teaspoon black pepper
- ½ cup grated Parmesan
Cook the ravioli according to the package directions. Drain in colander.
Meanwhile, heat the butter in a sauce pan over medium-low heat until it foams. Add the shallots and cook, stirring, until golden, 1 to 2 minutes. Increase heat to medium, add the sage, and cook until the leaves turn crisp, about 1½ minutes. Remove from heat. Season with the salt and pepper.
Return the drained ravioli to the pot, pour the butter and sage sauce over the ravioli, and toss gently. Add 1/2 cup of the Parmesan and toss again.
Divide among individual bowls and top with the remaining Parmesan. Enjoy!
