Monthly Menu: August
My monthly menu plan for August is a combination of this summer’s greatest hits, warm weather favorites we haven’t had a chance to enjoy yet and some super simple dinners to accommodate busy back to school activities. Everybody in my family gave their input about which summer meals they would like to enjoy one last time before I start incorporating fall flavors into next month’s menu. The recipe I couldn’t wait to make a repeat performance was this delish farro summer salad. My family always groans when they hear that our dinner involves kale, but the overall flavor of the salad wins them over every time. Spaghetti with Sausage and Smashed Tomatoes: Quick & Easy
Hoisin honey glazed pork with grilled pinapple: Tip: If you tug on a pineapple leaf and it comes out easily, that is a sign that the pineapple is ripe and ready to eat.
Greek Orzo Stuffed Red Peppers: Meat Free
Flank Steak with Rodeo Beans: It wouldn’t be summer if we didn’t make Rodeo Beans at least once. Guests rarely leave our BBQ’s without a copy of this recipe.
Peach Salad with Chicken and White Balsamic Dressing: Gluten Free Note: I substitute gorgonzola or feta for the goat cheese.
Pasta Primavera: Meat Free
3 Ingredient Slow Cooker Chicken Soft Tacos: I love that you can use frozen chicken breasts in this recipe. It’s great for those times that I forget to defrost my chicken ahead of time. I cook mine for the least time possible to avoid dry chicken.
Caprese Wrap: Quick & Easy
Note: Spread pesto on a large tortilla or Flatout flatbread. Layer baby spinach, fresh mozzarella and heirloom tomato slices before rolling everything into a refreshing wrap.
Strawberry Spinach Salad with Quinoa: meatless
Grilled Chicken Apple Sausage: Quick & Easy We serve these yummy sausages in an artisan sausage bun or sandwich roll with a side of boxed mac & cheese and watermelon for a simple meal that is also a guaranteed kid pleaser.
Greek Chicken Pasta Salad: Tip: serve with Trader Joes’s Garlic Naan
Taquitos and Black Bean Salad: Quick & Easy
Note: My family loves the bean and cheese taquitos from Trader Joes, but they are often out of stock. I’ll post my copycat DIY version in the upcoming weeks.

Turkey Avocado Club Wraps: Quick & Easy
Note: I am not a fan of ranch dressing so I use a little hummus instead to add creaminess. Tip: Cook bacon on a foil lined tray in the oven for 15 minutes at 400 degrees to avoid a messy stovetop
