One-Pan (really!) Pasta & Meatballs
Hi friends! It has been a busy week around here. We added two adorable guinea pigs to our family and it was the first day of the new school year. I would love to hear about any guinea pig tips that you have. Has anyone successfully potty trained one before?
If your week is anything like ours, it seems like our days are all of a sudden filled with meetings, practices, lessons and more. It’s hard getting dinner on the table, much less eating together as a family on most weeknights. I thought you might appreciate an easy dinner idea that you will be able to get on the table in under 30 minutes, using only one pot, and your kids will gobble up!
One-Pot Pasta and Meatballs is my son’s #1 requested dinner. This recipe is adapted from a Betty Crocker recipe I discovered years ago when my kiddos were in preschool and it has been a family favorite ever since. Every few months I pick up a bag of Kirkland Cooked Italian Style Beef Meatballs in the freezer section at Costco and keep them in the freezer for nights when I am in a pinch. I always have a jar of marinara sauce and pasta in the pantry and parmesan in the refrigerator, so this is one of those meals that you can throw together when you haven’t had a chance to make it to the grocery store for awhile.
One-Pan Pasta & Meatballs Recipe
- 1 cup of water
- 1 jar of marinara sauce
- 2 cups of bow tie (farfalle) pasta
- 20 frozen cooked Italian-style or regular meatballs (1 inch)
- grated parmesan cheese (optional)
In a 10-inch skillet, heat water and marinara sauce to boiling. Stir in bow tie pasta and meatballs. Return to boiling. Reduce heat to medium. Cover; cook for 15 minutes, until pasta is tender. Sprinkle with parmesan cheese. Enjoy!
I like to serve this with our favorite Trader Joe’s Caesar Salad, but I’ve been known to pull some frozen veggies out from the depths of our freezer on nights that our cupboards are pretty bare.
