Steak and Caesar Salad with Naan
I just want to start by saying THANK YOU for all of the sweet and encouraging words you have e-mailed, texted and posted on Facebook and Pinterest since Parker Posts made its debut last week. My heart is full and hope that you will continue to let me know what you like and what you would like to see more of each week.
My friend Nicole introduced me to this recipe a couple summers ago. I was immediately sold when she told me I could find all the ingredients at Trader Joe’s and prepare the meal in under 30 minutes! I knew the fact that this meal was a hit with her kids would be a great selling factor in convincing my own kids to try something new.
This meal only requires 5 ingredients:
- flank steak
- steak seasoning (we like McCormick’s Grill Mates Montreal Steak Seasoning)
- a caesar salad kit
- tandoori naan
- sugar plum or cherry tomatoes
I’m embarrassed to say I do not know anything about grilling. Am I the only one? Luckily, my husband is able to help me prepare this dinner. He starts by seasoning the flank steak, then searing it on both sides, before cooking the meat over indirect heat for 15- 20 minutes. His method produces a really juicy flank steak that is slightly pink in the middle. While my husband is outside grilling, I am inside preparing the salad kit, cutting tomatoes in half and preheating the oven for the naan bread.
Once the food has been prepped, I let each family member assemble their own dinner. I find that my kids are more likely to eat everything on their plate if they have been able to customize their serving sizes and how it is presented. For example, my daughter likes to deconstruct this particular meal and eat each item on its own. This is the opposite of my son, who piles all of the ingredients on top of the naan in order to eat his like a taco.
